Slow Cooker Spicy Black-Eyed Peas

These slow cooker black-eyed peas are flavored with jalapeño pepper, cumin, ham, and bacon for a spicy side dish. Perfect for potluck dinners and barbecues!

Ingreadients:

    • 6 cups water
    • 1 cube chicken bouillon
    • 1 pound dried black-eyed peas, sorted and rinsed
    • 8 ounces diced ham
    • 4 slices bacon, chopped
    • 1 onion, diced
    • 1 red bell pepper, stemmed, seeded, and diced
    • 1 jalapeño chile, seeded and minced
    • 2 cloves garlic, diced
    • 1 ½ teaspoons cumin
    • 1 teaspoon ground black pepper
    • ½ teaspoon cayenne pepper
    • salt, to taste

Direction

  1. Pour water into a slow cooker; add bouillon cube and stir to dissolve.
  2. Stir in black-eyed peas, ham, bacon, onion, bell pepper, jalapeño, garlic, cumin, black pepper, cayenne pepper, and salt.
  3. Cover and cook on Low until beans are tender, 6 to 8 hours.
  4. Serve hot and enjoy!
